My son's Ellipsis 7 won't allow me to uncheck "Google Voice Typing" as his default input method. When I click on the settings icon, it does not give me the option to change the default setting back to keyboard typing. How can I fix this?

It might be possible to trick the tablet into allowing you to make a change by going to the Play Store on the tablet or a PC and making sure you install an app like Google Keyboard to the tablet. During setup it will ask you to make it default. You might be able to do so and then go back into language and input and choose another keyboard.
