I will be traveling in Europe for several months and am considering buying a SIM card for my iPhone. I am curious about what callers to my current number will hear when they call me. Do they get my voicemail? Or a message that my phone is offline or something like that?

They would get your voicemail.
As far as Verizon would know, you simply turned your phone off.
If you receive many voicemails, a caller would eventually get a message that your voicemail is full and would not be able to leave a message if you didn't go in and clean it out occasionally.
