In the People/Contacts app, open the contact you want to change. Press the menu button and see if there are edit or delete options. Those options might also be on the screen in the form of icons.

If Your Contacts are Managed by Google you can go to Gmail.com Inter your Username & Password and once in Gmail follow along the Left side slightly down under your Inbox you can Manage, Delete and even print out your List..
