VIP is really a filter used to show you your most contacted or relevant messages. It filters out SPAM and messages from senders not typically in your contacts list. So, you'd probably see a filtering action based on priority of importance, such as VIP, Inbox, then SPAM. It is not a requirement and usually can be un-synced or removed.

How would you un-sync it or remove it if I decide to do so?
Check sync settings for folders and such in the email app settings.
