It started a couple weeks ago when my phone went thru an update. I have the
Samsung Galaxy S7. When I open up my text messaging, it used to an option
next to the space bar. Now when I click on the setting button, voice
texting (microphone) isnt even an option.

Let's figure this out, so you can start using voice text again, GEOFIT9. Please go to Settings>Language and input>Text-to-speech, and share what keyboard is currently selected. You can switch keyboards, and check to see if the microphone returns as an option. Keep us posted, and let us know if it starts working again, or if you need further assistance.
