apps moved, display different after latest update

I updated my S7 overnight & then today, my entire set up - how & where I had my apps located - were all changed.  It seems that, unless I take the time to manually move things around, I cannot get my phone to look like it did yesterday.  I tried many of the settings options, easy mode, etc. but nothing seems to make it look the same.   Does anyone have an idea how to "fix" this?   Thanks,

no way to go back.....virtually every os update has changed how things look.
