My alma mater's college basketball team is playing a game tomorrow that is only being shown in my area (ironically in Philly, the area where the school is based) on the YES network. To get the YES network would require ugrading 2 levels for FiOS TV at a monthly cost of $35, which is a lot of money. My question is if I upgrade, I assume I can downgrade back to the original package, but how long would I have to keep the new package before I could downgrade?

You can in most circumstances downgrade after 24 hours once the new order/package kicks in.
You can do it online or call them to switch back. I've switched a few times during my contract. Only downfall with being under contract is they make you re-sign a contract each time you change packages and the contract gets renewed from that date.
If you arent under contract and want to remain that way then make sure they dont force you to sign one when upgrading or downgrading.
