Is there a way to set my DVR to record TV shows that are further out than a week or two? I know when certain shows will be aired based on schedules that are published in other print media or Web pages. However the TV listings on FIOS do not go out more than two weeks.

As you said, the Guide data only goes out up to two weeks.
You could try using the Manual Recording option. I don't know if it will work or not. But I just went in and scheduled a recording for Sept. 11 and it showed up in my schedule. Now the question is will it really do the recording when 9/11 arrives? No idea.

Are the shows you are interested in part of a series? If so then setting up a recurring series is the way to go. If it is a series that is not currently airing then you would have to wait until the first airing to set up a named series.
If not, then I would agree with Justin's suggestion (assuming it will actually record - never tried it myself).
