Is there a setting that I can enter to let me know when my sent E-mail is received and read? Thank you

Assuming you are using the Verizon webmail interface, easy:

Just put a check in the check-box.

If you are using a client on your computer, I think every client probably provides the same capability, but where the setting is will depend on the client being used.
