Does anyone know if there is a way to Backup any photos and videos from my device that haven't already been backed up to the cloud ? It seems like there are certain periods of time where photos are not backed up and I'm afraid to delete them from my device until I am sure.

Making sure your content is safe and secure is always a top priority. Are you using Google Photos? That will make sure your pictures are backed up almost instantly, and you can manually back them up if need be: https://www.google.com/photos/about/
