Is there any way to decrease the amount of RAM being used?  My phone is using about 80%.

Why do you think you need more? These phones will drew up their ram for you before it becomes a speed issue. If you really feel the need, use the touchwiz task killer you can add to your home page. It quickly tells you how many apps ate open and gives you the option to end any open ones.
