I drag the apps to the garbage can but they do not go away?
There are two ways to remove downloaded apps: Go to the Market, hit the menu button, choose downloads, select an app and choose uninstall OR open Settings-Applications-Manage Applications, select the app and choose uninstall. You can't install the bloatware like Blockbuster, Bing, etc. Well you can but that's for a different forum.
What you are doing is deleting a shortcut not deleting application. In order to uninstall application you should do that through System - Application option. Note that not applications that are installed on the Fascinate can be uninstalled. A lot of them such as VZW bloatware can't be uninstalled unless your phone is {edit for TOS violation}
