If you accidentally deleted your eSIM, have you tried to reactivate your phone? I found the info below on the website. There are a bunch of links within it which either seem dated or not quite applicable to your situation, but the ones which take you to the My Verizon login screen look like the ones which would be the way to do it. Otherwise, I'd recommend visiting a corporate Verizon store so someone can get you a new eSIM.
