cut and paste

how do i "cut and paste" selected parts of texts or numbers, etc. from anything in selected for display like the blackberry was capable of doing?

U press on the screen the it will ask select all or select word then if u press select word u move the arrows to the word or words then u press again to copy cut or whatever.
