Have you tried what Wildman suggested? I would also like to suggest soft resetting your device; may have been a minor glitch after the device software updated that could be fixed with a soft reset.

I found some additional information about sound setting changes after gingerbread update. There is a setting called "Quiet ring on pickup", when enabled the device ring volume is reduced when moved. You can uncheck this setting to allow the device to ring at its normal volume, even when moved. Here's a picture of the Sound settings screen:
