When the keyboard freezes, acts funny, etc. go to:
Menu > Manage apps > All > Multi-Touch keyboard > Clear data [and clear Cache if it's not 0]
Others have found that turning off "Next word prediction" in the Multi-Touch keyboard settings also seems to help prevent keyboard freezes.
Menu > Settings > Language & Keyboard > Multi-Touch keyboard > Next word prediction
