Does anyone know how to turn off the auto text feature on a Samsung Galaxy S5?

Are you referring to auto-correct?  If so, go to settings > language and input > Samsung keyboard > Predictive Text > toggle Off in upper right-hand corner

If you're using the Swype keyboard, go to settings > language and input > Swype > settings > uncheck Next Word Prediction
