how do I add a signature to my outgoing text messages so people know who sent them?

go to the setup folder, in there you'll see a email setup, you can then edit your signature, password, etc for all you email accounts.
What I did with the curve 8530:
Go to http://www.blackberry.com/go/vzw using the BB browser. Edit each email address.
