How should I handle using my Pixel for a trip this summer to Italy. Should I use the Pass? Will it work well (GSM...?)

That's one option. Another is to look into using a prepaid SIM card from a local carrier with a local number.

Another option would be to look into signing up for Project Fi for the trip and then cancel the service when you get back. They have very competitive rates for international travel.
