Yeah, I noticed the amazon mp3 store yesterday. I was a little perturbed as well. A bit of searching around the interwebs though and I found a link to the .apk file for it so I could just install it separately. All better now and working fine. The other 2 I don't know anything about though, sorry.
Since the Market won't let you D/L apps that are not compatible with your phone it could be that the "profiles" of some apps have not been updated to reflect their compatibility with the Incredible.
