I have no 5G service at home. I have 2 bars at most (no 5G or LTE). Lately I have had dropped or failed calls. Our map does show that we should have 5G. I have had diagnostics completed on my phone and restarted my network. Nobody could find anything wrong at the Verizon desk. I need to use my phone for work. Is my only option to change cellular carriers?

What diagnostics were run? Maybe they missed something like checking that your carrier settings are up to date, or getting you a new eSIM, or reprovisioning your account.
You should be getting LTE at least, because all wireless technology which came before (1G, 2G, and 3G) has been shut down by all US carriers.
If you are on an old postpaid plan, Unlimited Welcome, or are using the prepaid service, you are subject to some level of deprioritization to the customers on the top-level current postpaid plans. If your call quality problems have only just come up, it's not just holiday shopping season, but also final exam season for college/university students - I live in an area with 4 different major college and university systems, and can attest that as a prepaid customer, my service can get a little strange at this time of year due to all the network congestion and deprioritization.
It's also possible you're in a dead zone. There are a lot of reasons why dead zones occur, but if you know anyone else who uses Verizon in your neighborhood and they also have terrible service while in the area, then it's a network issue.
