My iPhone randomly asks me to complete an eSim setup on MobileX despite me never having anything to do with MobileX.
Why is it doing this?

That's not good. I'm worried someone is attempting to add a line of service to your phone and/or fraudulently port your number out so they can intercept your 2FA codes to get into bank accounts and otherwise view your personal information. If it were me, I'd change all my passwords and usernames on any accounts containing sensitive information at least. Delete the other eSim from MobileX if it's on your phone. If the problem persists, you will need to contact a service specializing in identity theft recovery.
