Do I need to erase the old phone in order for the new phone to get the cellular service?

No, so long as the new phone is activated, it will work. However, performing a factory reset on the old phone is a good idea as many of us keep a good part of our lives in our phones. Just make sure you either moved the data over to the new phone and/or backed it up somewhere before erasing the phone. And get rid of the old SIM card if it's still in the old phone, or delete the old eSIM from the old phone.
