Unfortunately you are not able to lock/save messages unless it's a picture message. The messages are treaded messages, that's how your device formats the messages.
Apparently you have to get the "handcent" app.

If you download a 3rd party app such as Handcent, you are able to individually lock and save text messages. It's a really great app to have, lets you have so much freedom with your texting and customization, and it's free.
I don't know of an app that will let you view the texts in individual form, though. I think that's saved for the feature phones.
