What is the difference between 'GMail' and 'Mail' apps?

Gmail is just for your email from the gmail account. It is a push notification system. It won't check for email, but when the email server has new email it will "push" a notification out to your device.

Email is for your other email addresses that are pop, imap or the exchange accounts. It is mostly a scheduled sync where it checks the email servers at a set interval. Some accounts allow a push notification system.
