Hi Jehsakah22,
I feel your pain; it must be frustrating not finding your keyboard. Please try clearing cache and clear data from Multi-touch Keyboard/Touch Input. MENU>SETTINGS>APPLICATIONS>MANAGE APPLICATIONS>ALL>MULTI-TOUCH KEYBOARD. Press Clear Cache and Clear Data.
The above troubleshooting steps have resolved the missing keyboard issue for other customers and I trust these steps will resolve issue for you as well.
If issue continues after completing the above steps, please do a Factory Reset. Please keep in mind that performing a hard reset will remove ALL data including the Google account, system data, application data, application settings, and downloaded applications.

There is no "multi touch keyboard" option under the apps.
Would it be called something else?

Hi Jess6092,
Yes, it could be called something else, which would depend on if you have downloaded any 3rd party keyboard applications from the Market. If this is the case, you would look for that application.
Are you using the stock application for the keyboard currently?
I would like to make sure you are able to clear the cache and the data, and that you have a functioning keyboard. Please feel free to send me a PM with your name and mobile number. I will be happy to assist you further.
Thank you!

Perhaps you didn't realize that this is an Incredible 2 forum and the settings you spoke of do not exist on this phone. Problem not solved yet

Hey Verizon people. I do believe you missed the integral part of this situation, which is now affecting me.
There. Is. No. Keyboard.
This is not an issue of 3rd party software, or clearing the cache, or any other mundane steps listed in your scripted help sheets. The keyboard is flat-out gone from the phone. Bye bye. Sayonara. As in, can not be accessed because it does not exist.
