There is a way to save your documents to your sd card.   Although this may require an application download from the Market place.  (You can search the market for the different applications, you may want to use exchange activesync to search with) The steps for accessing the attachments are below.  Hope this helps!

From the home screen, touch the applications tab (located on the bottom of the screen).
Touch Email.
Touch Menu.
Touch Accounts.
Touch the Exchange ActiveSync email account.
Touch the desired email message.
View the selected email message.
If the email message has an attachment (e.g. jpg, pdf, doc, etc.) touch the desired attachment option:
Note An installed application is required to download or preview some attachment types. Note The maximum attachment size that can be downloaded for an Exchange ActiveSync account is 5 MB.

Save
Saves the attachment to the SD card.
Open
Previews the attachment within the viewed email.
