I noticed last night when comparing my DX and a Garmin gps the difference in the route the DX chooses. I was wondering if there was an option to switch between shortest route and fastest route.

Google Navigation gives will give you multiple routes. When Google Navigator starts up, You can click the box that the two arrows, a solid one and a dotted line one. If you look at the top of the screen, there will be different routes that you can select. Each option shows the mileage and estimated time. Your screen will also give you a visual summary of each route.
Should you veer off the route Google Navigator will give you a new one if you don't get back on it.

Not that I know of, I remember one time I was able to pull up a menu that allowed me to disable the option to have highways on navication screen and also to bypass toll booths but fir the life of me I cant seem to remeber how or where I seen it.

When u actually start a nav, hit menu > route info > then icon w/ gears on it.

How's it going. I concur w/ Wildman as far as google nav. goes, non that I can find. Vz nav., if ur willing to pay the fee does have that option.
