Truthfully, it all depends upon what you want to do with it. There are productive apps where you can work with spreadsheets, word processors, etc. There are financial apps where you can follow the stock market, keep tabs on your spending, etc. There are apps for horiscopes, palm reading, and so on and so on. My favorite apps is reader, where I can download books. So when I'm in a waiting situation, I can read either fiction or non-fiction. Go thru the Market and see what piques your interest. But be careful, sometimes one apps doesn't like another apps and will cause problems. If this happens, one of the apps must go.

I highly recommend reading the manual, although it is quite long (206 pages). I always get a charge out of folks that buy a phone and then jump right to the forums complaining about what the phone won't do or asking how to do things like put music on it or get email, all covered in the manual.
I'm getting ready to do some travelling, so I wanted to quickly and easily have the ability for GPS, finding local restaurants, etc. There are also some cool apps like the price scanner and coupons, as well as useful ones like Battery Booster to help with battery management. I also agree with mortb. There are a ton of apps out there, but many of them are kind of worthless. You have to pick and choose. And, again, watch out for conflicts that can cause problems with your phone.
You can certainly play around with it. The Verizon salesperson was very helpful in setting up my Google account (to allow apps) and giving me a quick primer on some of the major features. She also said that they will help you with any other questions you have like syncing with your PC, etc.
Good luck with your Incredible! I like mine and am glad I got it.
