My HTC incredible is being replaced with an identical device. How do I erase (not just delete) the data on my old phone?

You would complete a factory reset.

Ann154 is correct when she mentions that you need to do a factory reset. If you have an Incredible, you can find the steps to do a master reset through this link.
Some reminders:
If this was replaced via the warranty on your phone, be sure to transfer over your memory card. Keep your tracking number for your reference. Be sure to send back the old phone within allotted timeframe.
