I`m a huge Star Wars Geek and all....but i don`t really enjoy/want the binocular app. Can i un-install it??

if tis pre-installed when you buy it, then no, just like all the other verizon bloatware

You can not uninstall pre-installed bloatware. This is true of all carriers. However, there are third party apps, such as LauncherPro, which will allow you to hide the icons in the apps drawer. I am using LauncherPro, free version, and really like it. I no longer have many of the pre-installed icons, such as City ID, in the drawer. It's still in the phone, but not taking up space in the drawer.
