Another thought - something I've run into - is when you Access a Public access point, sometimes there is a "I AGREE" screen that must be clicked before it actually allows access to the Internet. have you confirmed ANY internet access is working ovewr WiFi? If it IS, then as @Wildman suggested, it just may be a size issue and not much you can do about it except try other WiFi hot spots.
However if you do NOT have an active Internet connect (try email or web browsing), bring up your Browser and try to connect to a site -- you should see the confirmation pop-up with the Agree to TOS" popup...
good luck,.

On YouTube app there is a option to upload videos but you will have to be connected to wifi to transfer large files...

Another way is after taking the video, just go into your Gallery on the phone and long-press the video - Select SHARE, then an option should be YOUTUBE .. and as Wildman pointed out, you must do this with WiFi active ...

In the Gallery, your video should have an arrow pointing upwards, one pointing downwards and two arrows split. Press the two arrows.
Choose your file options (public or private, etc) and "Upload".
As wildman and cody said, you must have a wifi connection to upload large files.
I'm going out on a limb here, but maybe you would find it easier to transfer the videos to your computer and upload them to YouTube from it.
Not sure why you are concerned with video settings. I upload.HD videos from my phone with no issues, but you must use wifi.

I just tried to upload a video to duplicate your problem and in true Droid X form (bringing out the bad attitude in me) I had to restart my phone to get the upload icon to react when pressed.
You might try restarting your phone and then trying again. The same could be true for your router, but not likely. More help here: http://www.google.com/support/youtube/bin/answer.py?answer=1186999

I think this may be your issue because most public access points like hotels has security restriction to avoid a user from exceeding bandwidth limits.
