There are a few ways you can do that. The easiest is to put any data on your Palm into your computer. Then hook your Droid X to the computer and select Mass Storage. The computer will see your Droid as another Drive. Just copy these files from the computer and paste them into your Droid. Don't worry about wondering what file they should go in. The Droid can figure that out for you. The second way is to put the bluetooth on for both phones and pair them, and just transfer via bluetooth the data you want to put into the Droid. This is probably the longest (in time) way since you can only do one file at a time. The Palm to computer to Droid X is probably the fastest since you can move several files at once.

This a easy one, export your contacts with Palm desktop app to cvs and then log into Google and import into the account.
