Does your case have a magnetic clasp?
There are a couple sensors in the back to determine if the phone has been places in the car or media dock, and if there is a magnet in your case it could be mis reading that.

Yes, as jasnmar said, it's the case. I thought I would go frugal and bought a leather case at a kiosk at one of our many malls. Whenever I took the phone out, it automatically went into car dock. No big thing, but an annoyance. Talked to a Verizon rep who told me the same thing as jasnmar said. Got a case made specifically for the Droid 2 and never had that problem again.

Try putting the phone in the case with the screen out, away from your body.  Since the magnetic sensors are on the back of the phone this may prevent the phone from going into car dock mode.  Also there are apps in the market that will turn off the docking function so magnets will not launch the car or media dock applications.
