i was wondering if anyone knew if there is a setting in the x that allows the look of text messages to be changed without downloading some sort of theme from the market?

Unfortunately at this time there is no setting on the phone that allows this. However there are many alternatives in the application market that offer this. Hope this helps.
Try out the app called HandCent SMS. I think that will suit you just fine
