First, long press the widget until it "pops".
There will be a border and some controls in the corners.
Drag one of the controls to make the widget 1 "space" larger.
Release the control and wait a few seconds.
An "add" button will be created in the new space, when you click the add button it will take you to a "task selector" which will allow you to select "Text Message" and the number (if there's more than one).
