Lets say Im already on the phone, a call comes in and I answer. We say what we need to say and call ends BUT it doesnt hang up and if I press "end call" it ends ALL the calls.

Try to let the caller end the call and then resume your previous call with the caller on hold.

The steps listed below was taken from user guide. 

Handling multiple calls
Your phone notifies you when you have another incoming call, and gives you the option of rejecting or accepting the call.
 If you are already on a call and accept the new call, you can
choose to switch between the two callers.
When you receive another call, tap Answer to accept the second call, and to put the first call on hold.
To switch between callers, tap the person you want to talk to on the screen.
To end the current call and return to the other call, tap End call

its not working...

 

BTW that LAST caller appears to hang up BUT the  phone still shows that they are still there (timer and all).

 

when I press END it ends is for EVERYONE

That is correct. Even if you go to the MENU, the icon states, 'End All Calls". There is no option to end the current one and go back. Guess when the one call ends, maybe if you went into MENU and chose Merge calls, you would get the 2nd caller back.
