I have Fios TV One and I am trying to maximize my video quality out of my cable boxes. I currently have two boxes (one Fios tv one main box and one Fios tv one mini box). Currently both boxes are using coax, but I noticed that there is the option to use Ethernet. Is there any benefit to replacing the coax with Ethernet? Would I see any improvements in video quality? Thank you!

No difference between the two. You MIGHT see better performance wired vs wireless, but your boxes are wired. The bandwidth with coax is high enough to allow for 4KHDR.
