Am in process of switching from Maxx to new Turbo. In past, apps I had downloaded transferred, too. I do not want that to happen again, as don't want all of them. How can I keep it from happening?

The rescue team is here to save the day. Do you have your apps synced with your gmail account?  If so they will transfer on your new phone.  You would need to ensure gmail account isn't synced with your apps.
