You can't 'hide' them like you can on some of the earlier Samsung models, you'll have to disable the app if it can't be uninstalled. In other words, go to Settings > Applications > Application Manager, scroll over to the All tab, then scroll down to the app you want to disable/uninstall and tap it. If it can be uninstalled, tap the Uninstall button; otherwise, tap the Disable button. Disabled apps will then appear in the Application Manager under the Disabled tab, so if you want to enable them again, just tap it and then tap Enable.
