Why would my set time zone be changed without my permission? Even so, why would the "automatic time zone given from provider" have daylight savings when I live in Arizona? My account is based here? I need to understand this.

Your device must be pulling data from an internet server outside of Arizona, hence the discrepancy in time with most of the US still observing DST.
I'm not a Verizon employee, just another customer trying to help.

My phone switched to DST this morning too, here in Arizona. It was quite an unpleasant surprise to find out I had been woken up an hour early.
I fixed my phone by switching on 'Set time zone based on location' on my Samsung.
Without that switched on, it's my understanding that the phone gets its time from its cell phone provider, meaning this is a Verizon screwup.
