Why does back up assistant plus always ask for my password in order for it to work? Is my information being saved somewhere else so I can get rid of this app? I have a long password and typing it in every time is a pain

As long as you save your contacts as Google contacts, they are backed up to your Gmail address. You can also sign up for Google+ and set it up to back up your pictures. There are also apps that will back up call logs and texts if needed, as well as almost anything else you can think of.
Unfortunately, because it came preinstalled on the phone, you will not be able to fully uninstall the Backup Assistant app, but you can disable it, which accomplishes basically the same thing.

From your homescreen, press menu>settings>accounts & sync, then select the Backup Assistant account. If you can't remove the account from here, you should at least be able to turn off the sync.

If you don't want to use Backup Assistant at all, after you force stop the app and clear data/cache, disable Sync Service.
