Deleting emails

Is there a way to set up the S5 so that when I delete an email from my phone, it does not delete it from the mail server?

depends what email, yahoo & gmail delete the email on phone & pc when it's deleted on either.

in account/pop3 email/settings,  there's a check box to delete from server.

system defaults to leaving on server unless you check the box to delete from server when deleted for the phone.
