EMail has settings within the app to control when mail syncs and can limit email to wifi only.
are you using the built in App? You get more control with specific apps, like gmail or yahoo.

Set your email app to either only sync on WiFi, or to not sync at all and manually check email when on wifi. What email app are you using? Stock, Gmail, 3rd party app?

To use wifi only, Turn on Airplane Mode, then selectively turn wifi on.

But be careful: if you have airplane mode on even with wifi enabled, you won't receive calls.

Just go into mobile networks setting and turn off mobile data. From there you can get calls or text, but never use mobile data.
