There is an app on my phone that contains my files. On the bottom of that is Google triangle and it has an email where all this information is stored. How do I change the email?

The email is the one associated with your Google account. If you want your info stored with a different email, you need to set THAT email up as a Google account. It doesn't have to be a gmail address, but you do need to set it up as a Google account to use Google drive with the email address of your choice.
