If I switch my plan to go unlimited can I use my Samsung Galaxy S7 as a mobile hotspot for my laptop and tablet for school work and basic web browsing?
Yes, however the mobile hotspot data would be limited to 600kbps. If you get BeyondUnlimited, you would get 15 GB of data on the hotspot before it is limited to that speed. It all depends on how you intend to use the data on which plan would be best for you.
