It's been said that "the only thing constant is change" - (Heraclitus). Either an update to the keyboard or an update to the texting app changed the way it works. Check the settings under language and input to see if there may be an option in the auto-correct to add a space automatically.
Granted, we all work differently, and I'm not in your shoes. For me, realizing the space is not added, adding a space when needed, and moving on seems a better path than stressing because the feature is not there.

Train yourself to hit the spacebar after adding a word? Seems pretty simple, if the space isn't added, then add it yourself.

Or use a different keyboard that does add the space.
I'm most definitely NOT a VZW employee. If a post answered your question, please mark it as the answer.

That's ridiculous! It was adding spaces before. Something changed. It's
2016 for God's sake... there's no reason it shouldn't' add a space after
selecting the word. Why don't I just go back to using a typewriter and mail
my emails?!?

SuzyQ is correct. Under Language and Input then Samsung Keyboard make sure Auto spacing is turned on.
