Why is my phone using data when I'm not using it? Every 3 to 5 mins a couple a kb are being used.

I turned off all the auto updates and syncs I could find but my is using data every couple of minutes without me touvhing it. Why???

If your phone sends a request to the mail server to see if there is new mail, it uses data. When the mail server sends back to your phone that there is no new mail, it uses data.
If you have apps set to sync, each time one of the apps checks the network to see if there is anything to sync, it uses data.
When you say you have turned off all auto updates and syncs, have you gone into each and every one of your apps to determine if there are sync settings on the app? Do the auto updates you have turned off include your email? Any weather alerts? Facebook alerts? Google Now updates?
