I just got my phone a few days ago. Not familiar with half of the apps on it. Are there ones that are senseless and can be deleted? Also is there somewhere that I can find out what each app is?

The pre-installed apps you usually can't delete but you can disable them.
VZW & Samsung both load their phones with Bloat ware. This slang term describe's app software that eats up storage space and RAM of your phone to install and run. In most cases you can Google an apps and find out what the app does and if safe to disable or remove.
What is difference between the email app and Gmail app? I only use Gmail so can I delete the email app?
The Email application is for the other email accounts (Hotmail, AOL, corporate exchange, Yahoo, etc.) if you use those types of accounts. You can also use it for a second or third Gmail account if you don't want the multiple accounts under the same application.

As noted above, you can't delete them only disable.

You can't can't disable or delete it. It only takes up 17 MB on my phone anyway.
