Will the STB output 2 channels simultaneously, so I can record a program on my old low-def VCR while watching another channel?
No, the DVR is playing back a program, so you can't watch a live channel while watching a play back.
It is not a Verizon DVR, it is a VCR that uses VHS tapes. Very low def, but it suits my needs.

You can't do it. The DVR cannot play a show while you watch another, it can record a show while you watch another but not what you want.
None of the Verzion boxes can output more than what is being viewed. Even the DVR which has 2 tuners is incapable of outputing 2 different channels / programs.

Still do not understand. Let me emphasize that this is a VCR (using VHS tapes). I do not have a DVR (Digital Video Recorder), for if I did have a DVR then I would not need the VCR, I could then record on the DVR. I do not have a DVR, nor do I want the expense of one.
I do understand that the Fios signal on the coax is digital, not analog, but the job of the STB is to convert the digital encoded signal to an analog video signal that all older equipment can use. An analog signal goes to the TV for the program that I am watching while another analog signal channel should go to a different output jack from the STB to my VCR. It seems like this is simple technology for the STB to be able to do, but it is not clear how to make it work.
